75g butter

40g plain flour

300ml milk

225g shelled cooked prawns (thawed if frozen)

1 teaspoon lemon juice

few drops of tabasco sauce

salt

freshly ground black pepper

pinch of cayenne

150ml double or whipping cream thickly whipped

To garnish:

2 tablespoons canned concentrated consomme

2 tablespoons soured cream

4 button mushrooms thinly sliced
