spaghetti alla napoletana

4 tablespoons olive oil
1 clove garlic chopped
1kg tomatoes skinned de seeded and chopped
150ml water
salt pepper sugar dried basil
450g spaghetti
sprigs parsley
50g grated Parmesan cheese
Heat the oil in a pan.
Add the garlic and tomatoes and fry for 5 minutes stirring.
Add the water cover and stew over a low heat for 20 minutes.
Season to taste with salt pepper sugar and basil.
Meanwhile cook the spaghetti in plenty of boiling salted water for 1O to 12 minutes until tender.
Drain.
Put into a hot dish pour the tomato sauce into the centre garnish with parsley and serve the grated Parmesan cheese separately.
