450g strong white flour
50g caster sugar
1/2 tsp salt
2 packets easyblend yeast
175m1 warm milk
2 eggs beaten
25g melted butter
1 tsp almond essence
50g chopped candied lemon peel
50g chopped candied orange peel grated rind
1 orange grated rind
1 lemon
225g marzipan
egg to glaze
Mix flour sugar salt and yeast together. Add milk eggs butter essence peel and rinds.
Stir to make a smoothish dough.
Transfer to a floured work surface and knead until the dough is smooth and elastic.
Place dough in a bowl cover with a cloth stand on top of the aga to rise.
When doubled in size knock back.
Roll to an oblong approximately 200 x 300mm.
Knead the marzipan and roll to a sausage 100mm long.
Place marzipan on the dough and roll the bread to form a 300mm long loaf.
Place seam side down on a greased baking sheet and cover.
Place the loaf on top of the aga to rise until doubled in size.
Brush with egg glaze.
Bake on the second set of runners from the top in the roasting oven for 25 to 30 minutes until the loaf sounds hollow when tapped on the bottom.
Remove from baking sheet and cool.
If desired pour on water icing sprinkle with toasted flaked almonds.
Stollen is very popular at christmas time but the commercial varieties can he overspiced. Try making your own. They can easily be frozen and decorated when thawed.
