tapenade eggs
4 medium free range eggs
250g black olives stoned
2 garlic cloves peeled and chopped
5 anchovy fillets chopped
1 heaped tbsp capers
1 tsp dijon mustard
4 large basil leaves
approx 4 tbsp olive oil
Hardboil the eggs then peel and cut in half lengthways. Carefully remove the yolks.
To make the tapenade place the remaining ingredients in a food processor blend well then check seasoning; you will probably not need salt.
Mash the yolks with about 3 heaped tablespoons of the tapenade and pile this mixture into the 8 egg whites to serve.
Add a splash or two of brandy to the mixture for extra oomph.
Green olives also nuke a good tapenade.
