1 neatly tied joint of beef fillet (about 1 kg)
vegetable oil
black pepper
for the salad:
1 cucumber halved deseeded and thinly sliced across
1/2 red onion thinly sliced into half moons
2 heaped tbspns coriander leaves
for the dressing:
2 tbspns lime juice
2 tbspns Oriental fish sauce
tbspn soy sauce
2 tbspns vegetable oil
1 tbspns soft dark brown sugar
1 large clove garlic crushed
2 tbspns finely chopped mint
1 fresh red or green chilli or more to taste deseeded and chopped
to serve:
lettuce leaves preferably old fashioned tender leaved round lettuce
sprigs of coriander and mint
lime wedges (optional)
To roast the beef preheat the oven to 240C/475F/gas mark 9.
Heat a little oil in a nonstick frying pan until very hot.
Season the meat all over with pepper then briefly sear the meat until well browned on all sides. This should take no longer than 3 4 min.
Transfer to a roasting tin and roast for 20 min.
The meat will be rare.
Remove from oven and allow to cool.
Thinly slice 500 to 600g of the beef.
In a bowl combine the dressing ingredients and whisk well then stir in the cucumber onion coriander and sliced beef.
Toss gently but thoroughly to combine.
Arrange the lettuce leaves to cover 6 plates or soup dishes and pile the salad on top.
Decorate with the sprigs of coriander and mint and lime wedges if using.
A simplified version of one of the classic dishes of Thai cooking Its important to use a good cut of beef and to cook it properly. The meat must be tender and rare. You can follow the traditional method and cook thick steaks on a barbecue then slice them across before adding to the salad bowl but using roast fillet of bee fadds a real touch of luxury. To cook the meat to perfection its a good idea to use a larger piece than you need for the recipe as here no one minds having cold roast beef left over.
