vitello tonnato

3 skinless chicken breasts

2 herds radicchio cut into strips

1 bunch watercress stemmed

dressing:

1/2cup reserved poaching liquid (below)

6 1/2 ounces canned tuna packed in olive oil drained

6 anchovy fillets rinsed and patted dry 3 tablespoons capers drained and rinsed

1cup mayonnaise

salt and freshly ground pepper to taste

Put chicken breasts in a pot just large enough to hold them.

Add cold water to cover.

Bring to a boil cover and simmer for 1 minute.

Remove from heat and let cool to touch with cover slightly ajar.

Remove chicken and reserve 1/2 cup poaching liquid.

Remove and discard bones and tear or cut chicken into strips.

In a large bowl combine chicken radicchio and watercress.

In a large blender or food processor puree reserved poaching liquid with tuna anchovies and 2 tablespoons capers.

Stir in mayonnaise and add salt and pepper.

Toss with chicken mixture and garnish with remaining capers.
