Cooking receipe to make white bean fennel and black olive salad under category General Recipes. You may find some video clips related to this receipe below.
white bean fennel and black olive salad
2 cups dried white beans (navy or cannellini) soaked in cold water overnight
1 large fennel bulb trimmed quartered and thinly sliced
1 small red onion diced
1/2 cup snipped fresh dill
dressing:
2 cloves garlic crushed
1/2 teaspoon ground sage
2 tablespoons fresh lemon juice
3 tablespoon white wine vinegar
1/2 cup olive oil
salt and freshly ground pepper to taste
1/2 cup black olives pitted and halved
Drain beans and put in a large pot with cold water to cover.
Simmer partially covered until tender about 45 minutes.
Drain and let cool.
In a large bowl combine beans fennel onion and dill. In a small bowl whisk all dressing ingredients together until well blended.
Taste and adjust seasoning.
Toss with bean mixture.
Sprinkle with olives and serve at room temperature.
It may look like celery and taste a bit like licorice but fennel isn
