Ingredients / Directions
3 large potatoes
peeled and cubed
1 medium onion
chopped
1 teaspoon minced or chopped garlic
3 tbs chopped green pepper
1/4 cup(s) butter or margarine
2 1/2 tbs all purpose flour
2 cup(s)s milk
1/3 cup(s) shredded sharp Cheddar cheese
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper
3 tbs chopped pimiento Cook potatoes in boiling water to cover 15 to 20 minutes or until tender. Drain and set aside. Saut� onion
garlic
and green pepper in butter until tender; add flour
stirring constantly. Gradually add milk; cook over medium heat
stirring constantly
until thickened and bubbly. Add cheese
salt and pepper; stir until cheese melts. Stir in potatoes and pimiento. Spoon mixture into a lightly greased 1 1/2 quart casserole. Bake
uncovered
at 350� F. for 30 minutes or until bubbly.
