quick bread

675g strong white flour and/or wholemeal flour

2 tsp salt

1 sachet easy blend yeast

1 tbsp cooking oil

450ml warm water

Measure flour salt and yeast into a mixing bowl and stir.

Add the oil and the warm water it must not be hot.

Add 300m1 to start with and mix in to make a pliable dough.

Add more water as necessary.

Transfer to a floured worktop and knead for 5 minutes until smooth and stretchy.

Shape the dough into rolls or loaves.

This quantity will make two small loaves or about 16 rolls.

Place in well greased tins and cover with a clean cloth.

Stand on a cloth on the lid of the simmering plate until doubled in size.

Glaze with beaten egg.

Bake in the roasting ovenloaves on the bottom set of runners for 30 minutes rolls on the third set of runners for 15 to 20 minutes.

To test if cooked tap the bottom: if the bread sounds hollow it is baked.

Cool on a wire rack.

If you want to make bread but are short on time use this method. It is even quicker with a large capacity food processor.
