10 slices bread very thinly sliced

3 tablespoons white sesame seeds

400ml groundout oil

prawn paste

450g peeled prawns preferably uncooked

1 teaspoon salt

1 egg

2 tablespoons spring onions finely chopped

2 teaspoons fresh ginger finely chopped

1 tablespoon light soy sauce

1 teaspoon sesame oil

Using a cleaver or sharp knife chop the prawns coarsely and then mince them finely into a paste. Put the paste into a bowl and mix in the rest of the ingredients. (You could do this in a food processor.)

This step can be done hours in advance but you should then wrap the paste well in clingfilm and put it into the refrigerator until you need it.

If the bread is fresh place it in a warm oven to dry out. (Dried bread will absorb less oil.)

Remove the crusts and cut the bread into rectangles about 7.5cm x 2.5cm. (You should have about 3 pieces per slice.)

Spread the prawn paste thickly on each piece of bread.

The paste should form a mound about 0.3cm deep although you can spread it more thinly if you prefer.

Sprinkle the toasts with the sesame seeds.

Heat the oil in a deep fat fryer or wok to a moderate heat.

Deep fry several prawn toasts at a time paste side down for 23 minutes.

Then turn them over and deep fry for about 2 minutes or until they are golden brown.

Repeat the process until they are all done.

Remove with a slotted spoon drain on kitchen paper and serve.

Sesame Prawn Toast is a savoury snack which is often served in dim sum restaurants outside China. Its origins are rather obscure but I suspect it is a variation on the prawn paste used widely in southern China for stuffings or for deep frying into crispy balls. Whatever its origin it is delicious and easy to make.
