shell pasta in tomato sauce

100g streaky bacon diced

1 onion chopped

1 clove garlic crushed

salt pepper sugar

1 carrot cut into cubes

1 head of celery trimmed and cut into cubes

2 tomatoes skinned seeded and chopped

300ml pint stock

150ml dry white wine

2 tablespoons tomato puree

20g butter

1 tablespoon chopped parsley

300g shell pasta

50g grated Parmesan cheese

Fry the bacon in a pan until the fat runs add the onion and the garlic crushed with salt and fry for 5 minutes until golden.

Add the carrot celery and tomatoes.

Pour in the stock and wine.

Stir in the tomato puree season with salt pepper and a pinch of sugar.

Cook over a moderate heat for 10 minutes.

Add the butter and parsley.

Meanwhile cook the pasta in plenty of boiling salted water for 10 to 15 minutes until tender.

Drain and add to the sauce.

Heat through without boiling.

Serve in a hot dish with

Parmesan cheese sprinkled over.
