shrewsbury biscuits

112g castersugar

1egg

224g plain flour

2tsplemon rind finely grated

Method

1 Cream butter and sugar until light and fluffy

2 Beat in egg

3 Stir in sieved flour and lemon rind to form a stiff dough

4 Knead lightly and roll out to i/4in (5mm) thick

5 Cut into required shapes and place on lightly greased baking trays

6 Bake in preheated oven until light golden in colour

7 Place on a wire rack to cool

Variations:?

56g chopped peel

Add any of the above with the flour
