Thai Prawn Curry

Ingredients:

1 kg big prawns

1/2 cup thick santan (pati santan)

1 cup general santan

Ground spices (combine)

5 cili padi

5 red chillies

1 tsp lemon grass, slice finely

1 tsp belacan granules

1/2 tsp turmeric powder

1 tsp coriander powder

1 tbsp coriander leaves

3 cloves garlic

1 tsp cumin (jintan putih)

1 tsp galangale, slice finely

3 kaffir lime leaves

5 to 6 sweet basil leaves

Garnishing

Coriander leaves

Seasoning

1 tbsp fish sauce

1 tbsp gula Melaka

1 tbsp oyster sauce

Method:

TRIM and clean prawns. Keep shells intact. Slit the back of the prawns and sprinkle them lightly with salt, pepper

and cornflour. Deep-fry prawns till golden.

Put pati santan in a non-stick wok and bring to a simmering boil. Add spices and saute till fragrant and oil rises to the

top.

Add in general santan and simmer for 6 to 7 minutes. Add prawns and seasoning. Cook for another 4 to 5 minutes.

Add kaffir lime leaves and sweet basil. Dish out and serve garnished with coriander leaves.
