1 1/3 cups butter or margarine, softened
1 1/3 cups sugar
2 eggs
2 2/3 cups flour
1/4 teaspoon salt
1 1/2 cups raisins, chopped
1/2 cup chopped candied ginger*
1 egg white, beaten for glaze
colored sugars, candied fruit, and walnuts for garnish
In large bowl, cream butter, sugar, and eggs. Stir in flour and salt, mixing until blended. Stir in raisins and ginger. Cover and chell dough. Roll out dough on lightly floured board to 1/8 inch thickness; cut into desired shapes with sharp-edged cookie cutters. Space 2 inches apart on greased baking sheets. Brush with beaten white; sprinkle with additional sugar, or decorate with colored sugars, candied fruits, or walnuts, if desired. Bake in preheated 350 deg. oven 12 to 15 minutes or until golden. Cool 2 to 3 minutes on pan; remove to wire rack to cool completely.
Makes 1 1/2 to 2 dozen cookies
* An additional 1/2 cup of raisins may be substitued for candied ginger; add 1 tablespoon ground
ginger.
