300 ml pint milk 4 eggs
450 g coarsely grated fontina Emmenthal or gruyere cheese
300 ml pint dry white wine
25 g canned white truffles
salt pepper
1 small French loaf diced
This is one of the best of all cheese fondue dishes.
The truffles are not cheap but they make a great deal of difference.
Heat the milk in a pan add the cheese and beat well together.
Pour into the fondue pan.
Heat stirring all the time then add seasoning.
Cook gently for 5 minutes stirring constantly.
Whisk the eggs with the wine then add to the fondue pan stirring hard.
You want a smooth thick creamy mixture.
Cut the truffles into very small dice and add to the fondue.
Place the fondue dish over its heater.
Each guest spears a piece of bread on his fondue fork and dips it into the cheese
mixture
Serves 5
