fried fresh herring with mustard

1kg fresh herring
2 egg yolks
2 tablespoons prepared mustard
2 tablespoons whipping cream
1/2 cup fine dry bread crumbs
margarine or butter
Clean and fillet the herring.
Rinse well drain and sprinkle with salt.
Stir together the egg yolks mustard and cream.
Dip the herring into the batter then into the bread crumbs.
Heat a skillet with margarine or butter.
When the foam subsides add the herring and cook over medium heat till golden brown on both sides.
Serve hot or cold.
