300g red mullet fillets
juice 1 lemon
250 water
150g canned octopus
100g frozen scampi thawed
2 onions thinly sliced
1 small pickled cucumber thinly sliced
2 tomatoes skinned seeded and quartered
100g canned french beans
dressing
80ml olive oil
2 tablespoons wine vinegar
1 teaspoon prepared mustard
salt pepper
Poach the red mullet fillets in the lemon juice and water for 10 minutes.
Drain and flake.
Cut the octopus into bite sized pieces.
Put the mullet octopus and scampi in a bowl.
Add the onions pickled cucumber tomatoes and French beans and mix carefully.
Mix the dressing ingredients together and pour over the salad.
Allow to stand for 20 minutes before serving to allow the flavours to mingle.
