honey cookies
6 oz plain flour
2 oz cornflour
8 oz butter
3 ozs sifted icing sugar
few drops almond essence
For the topping
extfa sifted icing sugar
raspberry jam
Sift together the flour and cornflour and set aside
Cream butter very well until soft
Add the icing sugar and flavouring mixing well
Gradually work in the flour and cornflour until smooth
Spoon mixture into a large forcing bag fitted with a large rosette piping nozzle.
Pipe the mixture into paper baking cases arrange on a baking tray.
Pipe twice round the outer edge so there is a hollow in the centre.
Place in centre of oven Mark 4 or 350F and bake until cooked (about 20 minutes) but still pale.
Cool cakes dust with icing sugar and finish with a little raspberry jam in centre of each.
