jeera prawn

340g fresh or frozen shrimps prawns or king prawns

4 tbspn ghee or vegetable oil

1/2 Spanish onion finely chopped

1 inch piece fresh or dehydrated ginger

2 tspn garlic puree (qv garlic and ginger info)

1/2 red capsicum in thin strips

salt and pepper

spices:

1 tbspn whole cumin seeds white

1 tspn turrneric

Shell thaw clean and strain the prawns.

In a pan heat the oil to hot.

Fry the cumin add the onion ginger and garlic.

When well cooked lower heat add the turmeric and capsicum.

Stir fry until the capsicum has softened but retains its colour then turn up the heat to high add the prawns and coriander and stir fry for about 5 minutes then serve.

A quick and simple stirfried dish from the coasts of India proving that minimum spicing can sometimes have maximum effect. It takes only 15 minutes to cook and can be served either as a starter or a main course dish.

Serves 4 as a starter
