mince pies

125g butter

1 egg white lightly beaten

275g plain white flour c

aster sugar for dusting

225 spicy apple mincemeat (qv)

cream to accompany

Rub the butter into the flour and bind to form a firm dough with about 4 tbsp water.

Knead lightly until just smooth.

Roll out the pastry thinly and using a 55mm round cutter cut out about 48 rounds re rolling as necessary.

Place half the rounds on baking sheets and spoon mincemeat onto the centre of each Moisten the pastry edges.

Cover with the remaining pastry rounds sealing the edges well flute if wished.

Make a tiny hole in the top to allow the air to escape.

Bake on the grid shelf on the floor of the roasting oven for 10 to 15 minutes until just set but not browned.

Take the pies out of the oven and brush with lightly beaten egg white and dust with caster sugar.

Return to the oven for a further 5 to 7 minutes or until well browned.

Serve the mince pies warm with cream.

It just wouldnt be christmas without these all time favourites.
