monkfish stir fry

350g monkfish or other firm white fish skinned and trimmed

juice of 1 lemon

2 tbsp hot red pepper oil or a few shakes tabasco and 2 tbsp olive ail

1 tbsp tomato puree

8 spring onions trimmed and sliced

1 red pepper deseeded and sliced finely

225g baby corn green noodles or rice to serve

Wash the fish and pat dry on kitchen paper. Trim into 25mm cubes.

In a bowl mix together the lemon juice tomato puree and the hot red pepper oil. Toss in the fish mix well cover.

Leave to marinade for 2 to to 3 hours in the fridge.

Heat a wok or large frying pan.

Stir in the fish lightly drained.

Stir well and add the onions pepper and corn.

Keep stirring for 12 minutes until cooked. Add the remaining marinade and heat through.

A slightly fiery stir fry but it can be toneddown by using less Tabasco sauce. This dish is good for a quick lunch. Have all the ingredients ready before starting to cook.
