pavlova
3 egg whites
175g caster sugar or 100g caster sugar and 50g soft brown sugar
1 tsp white wine vinegar and 1 tsp cornflour blended together
Prepare a baking tray line with nonstick parchment or a reusable nonstick baking tray.
Whisk the egg whites in a dean dry and grease free bowl until white and fluffy. Continue to whisk adding the sugar 1 teaspoonful at a time.
When all the sugar is in whisk in the cornfiour mixture.
Using tablespoons spoon the meringue into a circle.
Use some meringue to fill in the circle but ensure the sides are higher than the base. Roughen the edges.
Bake in the simmering ovenon the bottom set of mutters for 2 hours.
Remove from the baking sheet and stand upside down on the sheet.
Return to the ovenleaving the door slightly ajar.
I continue to dry overnight or at least for 6 hours.
emove from the ovenand avow to cool before wrapping and storing or filling with cream.
Filling:
300m1 double or whipping cream
225g fresh fruit eg raspberries strawberries kiwi fruit passion fruit
In winter I sometimes fold 2 tablespoons of chopped stem ginger and 1 tablespoon of ginger syrup into the cream. Alternatively frozen fruit selections can be stirred into the cream but drain off the juices first. Whip the cream to a soft peak. Gently fold in half the prepared fruit. Pile this into the middle of the meringue and decorate with the remaining fruit.
This is always a popular dessert for a special meal. I make my meringues dry so that they can be made in advance and stored either in a box in the freezer or a dry cupboard. I can also fill them an hour or two before serving which allows time for the cream and filling to soften the meringue slightly and me time to get on with other preparations.
