scotch pancakes

100g self raising flour

pinch salt

1 egg

150m1 milk

Measure the flour and salt into a bowl.

Make a well in the centre add the egg and half the milk and beat will then stir in the remaining milk to make a thick batter.

Brush and then lightly grease the simmering plate.

Spoon the batter onto the simmering plate spacing well apart about 6 or 7 at a time.

When bubbles rise to the surface turn the pancakes over using a fish slice.

Cook for about a minute on the second side until golden brown.

Lift off and keep warm on a plate in the simmering ovenwhilst all the batter is being used up.

Serve warm with butter.

If you are making a large batch it may be necessary to put the lid down for a few minutes to warm up the simmering plate.
