seafood pie with leeks and blue cheese
700g floury potatoes
salt and freshly ground black pepper
450g cod haddock or whiting fillet
350ml milk
350g leeks
25g butter
freshly grated nutmeg
225 g (8 oz) large peeled prawns
For the cheese sauce:
50g butter
3 level tbsp plain white flour
125g blue stilton cheese
4 tbsp single cream
Peel the potatoes and cut into 5mm slices.
Bring a large saucepan containing 10mm of salted water to the boil.
Add the potato slices bring to the boil and cook in the simmering ovenfor 10 to 15minutes until partially softened.
Drain thoroughly in a colander.
Place the fish in the pan.
Pour 50ml of the milk over.
Season lightly.
