stuffed tomatoes

4 large beefsteak tomatoes

salt and pepper

3 tbsp parsley chopped

2 tbsp basil chopped

6 tbsp grated sbrinz or parmesan

6 tbsp fresh breadcrumbs

1 tbsp olive oil

Cut the tomatoes in half horizontally.

Scoop out most of the insides using a sharp tsp or grapefruit knife.

Mix together the parsley basil 4 tbsp of grated cheese salt and pepper and breadcrumbs.

Fill the tomatoes with the stuffing.

Stand in a lightly oiled ovenproof dish.

Put the ovenshelf on the floor of the roasting oven.

Put in the tomatoes and bake for 20 minutes or until golden brown and the tomatoes are softened.

Sprinkle on the remaining cheese and serve with warm crusty bread.

The baking seems to bring out the sweet flavour of the tomatoes. Prepare in advance and bake when needed.

Serves 4 for lunch or 8 for starters
