Cut each potato in half the long way and scoops out the warm pulp leaving just enough next to the skin to keep it from collapsing.

The scoopings go into a bowl where theyre joined by cream cheese sour cream and a little milk if needed for more moisture plus onion salt garlic salt and freshlyground black pepper.

Mix this all together then return it to the potato shells.

Dot the tops with butter and sprinkle with a little grated cheese.

You can vary the filling too.

Add crumbled bacon baked beans or any cooked vegetable you have whether its left over or freshly sauteed just for this.

Its better to overfill the potatoes (use 10 baked potatoes to produce 8 twicebaked). Refrigerate them in a covered casserole to reheat in midbaking or midroasting ovenas needed (as many as she wants at a time).

Great as a snack and easy for children to heat for themselves. Easiest to fix when the potato is freshlybaked and still warm. baking is the least laborintensive way to cook a lot at one time.
