125 g butter
1 cup brown sugar lightly packed
3 eggs
100g pecans roughly chopped
1 3/4 cups self raising flour
3 medium bananas, mashed
1/2 cup milk
1 teaspoon vanilla
Preheat oven 160 degrees (centigrade)
Grease and line 24 x 13 cm loaf tin
Beat butter and sugar together, add eggs one at a time mixing well after
each addition
Fold in flour and pecans til just combined
Combine bananas, milk and vanilla and stir into cake mixture
Spoon into prepared tin
Bake 60 to 75 mins (test with skewer – mine was just 1 hour)
Cool 5 min in tin before turning onto cooling rack.
Ice with cream cheese frosting, and decorate with extra pecans – 125 gm
cream cheese; half cup icing sugar, squeeze lemon juice.
