4 mediumsized tomatoes de skinned halved and de seeded

150ml water

1 onion chopped

1 clove garlic crushed

salt

1 bay leaf

4 teaspoon dried marjoram

1 teaspoon grated lemon rind

4 peppercorns crushed

300ml dry white wine

4 small mackerel

Put the tomato halves in a soup pan with the water onion garlic crushed with salt bay leaf marjoram lemon rind peppercorns and wine.

Cover and bring to the boil.

Cook for 10 minutes.

Wash and clean the mackerel.

Fillet them but do not skin them.

Cut each fillet into three and add to the pan.

Add a little water or wine if necessary.

The pieces of fish should be just covered.

Simmer for 15 minutes season with salt and serve.
