minced lamb and cracked wheat kebabs

Bulgur kebabi


1kg lean minced lamb

85g fine bulgar (cracked wheat)

1 egg

1 large onion coarsely grated

3 cloves garlic crushed

4 tbspns finely chopped fresh mint

5 sprigs flat leaved parsley finely chopped

1/2 tspns ground allspice

1 1/2 tspns paprika

1/2 tspns cayenne or antep pepper

40g pin nuts coarelsy chopped

salt and freshly ground black pepper

to serve

host flat pitta bread

tinily sliced onion rings sprinkled with urfa pepper

grilled tomato slices

small plate of antep pepper

Rinse the bulgar briefly.

Put in a bowl cover with hot water and leave to soak for 20 minutes.

Drain and squeeze out excess water.

Mix the bulgar with the meat and the egg and then mix in the remaining ingredients.

Season the mixture and work it with your hands until it is well amalgamated.

Make it into 18 mediumsized elongated flat patties.

Grill the patties in 2 batches for about 3 minutes on each side.

Keep the first batch warm while the second is cooking.

While the kebabs are grilling prepare a small platter with some onion rings sprinkled with urfa pepper.

Serve with hot pitta grilled tomatoes small plates of antep pepper for dipping the kebabs in and a large mixed salad.
