1 clove garlic minced

3 scallions white parts only finely chopped

1 inch piece fresh ginger peeled and grated

4 fresh mint leaves

2 tablespoons rice wine vinegar

1 tablespoon soy sauce

1 tablespoon asian sesame oil

1 teaspoon packed brown sugar

salt and freshly ground pepper to taste

In a small bowl whisk all ingredients together until well blended. Refrigerate in an airtight container for up to 5 days.

Tang and nuttiness make this a perfect choice for Asian pasta salads rice salads or a mixture of steamed vegetables.
