300g plain four
150g banana mashed
1 teaspoon lemon juice
pinch of bicarbonate of soda
2 teaspoons caster sugar
2 tablespoons white poppy seeds
Sunflower oil for deep frying
salt
Knead the flour banana lemon juice bicarbonate of soda salt and sugar with just enough water to make a stiff dough.
Cover and leave for 10 minutes.
Make equal sized balls of the dough (15mm in diameter).
Roll each ball in a plate of poppy seeds.
Heat the oil in a kadai or wok.
Roll out each ball to a thin even disc
Gently slide the poorie into the oil and fry until puffed up and golden.
Take care not to overheat the oil.
Drain on a slotted spoon and remove onto absorbent paper.
Serve hot.
Serves 4.
