grilled red mullet with rosemary

4 mediumsized red mullet cleaned and scaled

1 fat clove of garlic quartered lengthways

11/2 tbsp roughb chopped fresh rosemary

85 ml olive oil

Juice of 1 lemon

2 cloves of garlic chopped

Salt and pepper

1 lemon quartered for squeezing

To serve:

Lemon wedges

Make 2 diagonal slashes across the thickest part of

each fish on both sides so that the heat can penetrate.

Slip a quarter of a clove of garlic and a little chopped rosemary into the stomach cavity of each fish.

Place in a closefitting dish.

Mix together the olive oil lemon juice chopped garlic remaining rosemary salt and pepper.

Pour over the fish.

Leave to marinate for at least half an hour and up to 4 hours turning occasionally.

Preheat the grill or barbecue thoroughly.

Take the fish out of the marinade.

Dont bother to brush off any bits of rosemary or garlic as theyll char nicely in the heat.

Grill about lOcm away from the heat.

Turn once as they grill and occasionally squeeze a lemon quarter over them.

Serve with extra lemon wedges for those who want them.

Often known as the woodcock of the sea red mullet is a strongly flavoured fish which can take on other forceful flavours such as rosemary and loads of lemon.
