mastic info

Mastic is the solid gum or resin from the bark of the evergreen tree Pistacia lentiscus which grows mainly on the Greek island of Chios but also in some places in the middle East. The word comes from the Greek word masso to chew hence to masticate.

Its flavour and aroma like freshly ironed linen I think is essential to a number of Greek breads and cakes. It is wonderful in icecreams and used to be the traditional flavouring in Turkish delight.
