moroccan chicken tajine


1 free range chicken weighing about 1.25kg cut into 6 pieces

2 tbspns olive oil

1 large onion thinly sliced

5 cloves garlic peeled and crushed

25mm piece fresh ginger grated

2 pinches saffron threads crumbled

1 tbspns caraway seeds

1 1/2 tbspns ground cumin

1 tspns paprika

1/4 tspns cayenne pepper

150ml hot water

1 preserved lemon (qv) finely chopped

large hanful coriander coarsely chopped

225 black olives rinsed

salt and freshly ground black pepper

for the couscous

275g pre cooked couscous

1 tbspns olive oil

300ml hot chicken broth or water

Heat the oil in a large ovenproof saucepan and saute the onion until translucent.

Add the garlic ginger and spices and saute together briefly until aromatic.

Add the chicken pieces and turn them around with a spatula for 23 minutes to coat them in the spices.

Add the hot water and the preserved lemon with some seasoning.

Cover and either simmer for 50 minutes or cook in the oven preheated to 160 C/325F/gas3 for 1 hour.

Add the coriander and the olives to the pan and simmer for 1o more minutes or return to the oven for 15 minutes more.

Half an hour before serving prepare the couscous: spread it in a large attractive gratin dish add the oil with some salt and the broth or water.

Mix and let it stand for 15 minutes.

Fluff it a little with a fork and place in the oven with the chicken for 5 minutes just to warm it through.
