mozzarella with sun dried tomatoes anchovy and basil

1 buffalo mozzarela cheese about 140g
6 pieces of sun dried tomatoes preserved in oil
small handful of basil leaves
3 tinned anchovy fillets cut into 3 pieces
12 black olives
2 tbspns olive oil
1 tspn balsamic vinegar
Slice the Mozzarella thinly and arrange the pieces on a pretty platter.
Top each slice with a sun dried tomato and then with 1 or 2 small pieces of anchovy.
Sprinkle the olives all over.
Beat the oil and vinegar lightly and sprinkle this all over the salad.
Decorate with the basil leaves and serve.
Serves 4
