550g purple plums or peaches
1/2 tspn softened butter for the dish
2 tbspns caster sugar
for the batter
3 eggs
50g caster sugar
300ml milk
50g plain flour sifted with a pinch of salt
1 tbspn pure vanilla extract
large pinch ground cinammon
Preheat the oven to 190C/375F/gas 5 and butter a 25cm flan dish or similar baking dish.
Slice the plums in half and stone them.
If using peaches first blanch them briefly in boiling water.
Then skin and stone them and cut them into quarters.
Arrange the fruit in the dish skin down and in one layer closely packed.
Sprinkle the sugar all over the top.
Make the batter: mix the eggs sugar and milk together in the blender add the flour vanilla and cinnamon and blend until smooth.
Pour the batter mixture over the fruit and bake for about 50 minutes until quite risen and golden on top.
It will be studded with the colourful fruit and the juices of the fruit will have made the dish meltingly soft and sweet.
Clafoutis is best served hot or warm.
