250g plain flour

pinch of salt

pinch of caster sugar

15g fresh yeast

425ml luke warm water

4 eggs

125g butter melted

sugar syrup (qv)

rum

apricot glaze

Sieve the flour into a large mixer bowl.

Add the salt and the sugar.

Dissolve the yeast in the water and add to the flour.

Whisk the eggs into the flour.

Slowly add the butter and beat for about 5 minutes until the dough tightens and all the butter is absorbed.

Lightly butter your moulds (baby ones for petite fours) and half fill with the mixture.

Leave to prove until doubled in size.

Bake in the oven preheated to 180
