saffron mayonnaise

pinch of saffron threads

1 tablespoon boiling water

2 egg yolks

1 tablespoon lemon juice

2/3 cup olive oil

salt and pepper

Place the saffron threads in a small bowl. Pour the boiling water over the saffron and leave to infuse for 10 minutes.

Combine the egg yolks and lemon juice in a separate bowl.

Add the saffron and its soaking liquid to the egg and lemon juice mixture and beat until slightly thickened.

Continue to beat briskly gradually adding the oil in a thin stream until the mixture forms a thick creamy mayonnaise.

Season with salt and pepper to taste.

Makes 3/4 cup
