2 cups couscous (pearl pasta
2 cups frown petite pois
2 cups bay shrimp
1 cup pea shoots or bin sprouts
ginger dressing:
2 tablespoon grated fresh giver
1 teaspoon packed brown sugar
1 clove garlic minced
1/2 tpsn red pepper flakes
1/4 cup fresh lime juice
1 tablespoon sesame oil
1/2 cup peanut or canola oil
salt and freshly ground pepper to taste
red lettuce leaves for serving
2 tablespoons sesame seeds toasted (qv)
Cook couscous in a medium pot of salted boiling water for 8 to 9 minutes. Drain and let cool.
Cook peas in salted boiling water for 4 minutes.
Drain under cold water and cool.
In a large bowl combine pasta peas shrimp and shoots or sprouts.
In a blender or food processor puree all dressing ingredients until smooth. Taste and adjust seasoning.
Toss with couscous mixture.
Line a serving plate with lettuce leaves and mound salad over them.
Sprinkle with sesame seeds.
Couscous adds new interest.to any pasta salad but if you can
