sesame noodles

1 pound rice noodles or spaghetti

dressing:

2 tablespoons smooth peanut butter

2 tablespoons asian sesame oil

2 tablespoons soy sauce

1/2 cup water

2 cloves garlic minced

1 tablespoon minced fresh ginger

1 tablespoon honey

1 teaspoon red pepper flakes

1 cucumber peeled halved lengthwise seeded and thinly sliced

4 scallions thinly sliced

1/2 cup fresh mint leaves coarsely chopped

1/2 cup fresh coriander leaves coarsely dapped

2 cups cooked poultry shrimp or meat diced (optional)

Cook noodles according to package directions.

Drain and let cool.

In a small bowl whisk all dressing ingredients together until smooth.

In a large bowl combine noodles with remaining ingredients.

Toss with dressing and serve at room temperature or chill before serving.
