455g pickling onions

15g ginger root thinly sliced

285ml shoyu sauce

To help peel the onions blanch them and leave until they are cool

The skins will slip off easily and they will not be soft after pickling as some people fear

Place the onions in a brine and leave for a day

Drain them and pack into a pickling jar with the slices of ginger

Pour over the sauce until the onions are covered

Leave for six months to a year

Serve with reblochon cheese and the salad below.
