soused mackerel

4 mackerel about 455g each. gutted and cleaned

230g onions chopped

1 tablespoon soft dark brown sugar

A bouquet garni

4 black peppercorns

1 teaspoon pickling spice

280 ml malt vinegar

Set the oven at Gas Mark 4 350 degrees F 180 degrees C.

Arrange mackerel in an ovenproof dish.

Sprinkle over onions sugar bouquet garni peppercorns and spice.

Pour over the vinegar and bake for 45 minutes to 1 hour until the flesh flakes easily

Carefully lift and drain mackerel.

Strain the marinade over the fish and allow to cool.

Chill and serve the fish in the marinade.

Serves 4
