spaghetti alla puttanesca

4 tablespoons olive oil

6 anchovy fillets chopped

2 cloves of garlic peeled and finely sliced

a couple of pinches of dried red pepper flakes

450g tinned cnushed tomatoes

12 black olives stoned and chopped a little

spaghetti for 2

1 tablespoon capers rinsed

a large handful of parsley chopped

Parmesan cheese to serve

Warm the oil in a shallow pan.

Add the anchovy fillets garlic and red pepper flakes and over a quite moderate heat until the garlic turns golden.

Add the crushed tomatoes and the olives then simmer for about 15 minutes until you have a thick sludge.

Cook the pasta in lots of boiling salted water till tender then drain.

Stir the pasta into the sauce; season with salt and add the capers and parsley.

Serve with Parmesan cheese.

Serves 2
