225g boneless chicken breasts
1 dried red chilli
11/2 tablespoons oil
75g raw peanuts shelled (qv)
1 tablespoon dry sherry or rice wine
2 teaspoons dark soy sauce
1 teaspoon sugar
1 teaspoon garlic finely chopped
2 teaspoons spring onions finely chopped
1/2 teaspoon fresh ginger finely chopped
1 teaspoon cider vinegar or Chinese white rice vinegar
1/2 teaspoon salt
1 teaspoon sesame oil
Cut the chicken into 2.5cm cubes.
Split the dried chilli in half lengthways.
Heat the oil in a wok or large frying pan and add the chilli. (You may remove it when it turns black or leave it in.)
Next add the chicken cubes and peanuts and stir fry them for 1 minute.
Remove the chicken peanuts and chill) from the pan.
Put all the sauce ingredients except the sesame oil into the pan.
Bring the sauce to the boil and then turn the heat down.
Return the chicken and peanuts to the pan and cook for about 2 minutes in the sauce.
Add the sesame oil and then serve immediately.
Rice and Stirfried Chinese Greens would go well with this.
This is a classic western Chinese dish which is better known in China as Gongbao chicken. According to one expert the dish was named after a Chinese official Ding Baozhen who was Governor of Sichuan province in the nineteenth century. There are many versions of this recipe; this one is close to the original and is also quick and easy to make.
