spicy oriental sauce
ladenis
450ml honey
400ml white wine vinegar
1 small bunch fresh coriander
1 tspns english mustard
150ml sesame
a pinch each of the following:
ground coriander
ground ginger
ground cumin
ground turmeric
ground fivespice
ground cloves
curry powder
ground caraway seeds
ground fennel seeds
ground black pepper
ground cardamom
ground star anise
1L demi glace (qv)
1 tpsn red chilli pepper diced
1 tbspn sweet shallots finely chopped (qv)
In a saucepan reduce the honey and vinegar to a caramel.
Add the fresh coriander mustard and oil.
Add all the spices and simmer for 1 minute.
Remove from the heat and leave to cool and infuse.
In a separate pan bring the demiglace to the boil then pour over the spice mixture.
Leave to cool and when cold pass through a fine sieve
When needed reheat the sauce and add the chilli and shallot.
Serves 4
