350g lean beef steak
2 teaspoons dark soy sauce
2 teaspoons dry sherry or rice wine
1 teaspoon fresh ginger finely chopped
1 teaspoon cormlour
1 teaspoon sesame oil
70ml groundnut oil
2 dried red chillis cut in half lengthways
1 tablespoon fresh orange peel coarsely chopped or 2 teaspoons dried citrus peel soaked and
coarsely chopped
1/2 teaspoon roasted Sichuan peppercorns finely ground (optional)
2 teaspoons dark soy sauce
1/4 taspoon salt
1 teaspoon sugar
1/2 teaspoon sesame oil
Cut the beef into thin slice 5cm long cutting against the grain.
Put the beef into a bowl together with the soy sauce sherry or rice wine fresh ginger cornflour and 1 teaspoon of sesame oil
Mix well and then let the mixture marinade for about 20 minutes.
Heat the oil in a wok or large frying pan until it is very hot.
Remove the beef from the marinade with a slotted spoon.
Add it to the pan and stir fry it for 2 minutes until it browns.
Remove it and leave to drain in a colander or sieve.
Pour off most of the oil leaving about 1 teaspoon.
Re heat the pan over a high heat and then add the dried chillis.
Stir fry them for 10 seconds and then return the beef to the pan.
Add the rest of the ingredients and stir fry for 4 minutes mixing well.
Serve it with rice and Sweetcorn Soup with Crabmeat (qv).
This is a northern Chinese beef speciality. I have adapted it by substituting fresh orange peel for the dried tangerine peel which is sometimes hard to get. The Chinese always use peel which has been dried.The older the skin the more prized the flavour. Its quite easy to make your own dried peel but I find the tartness of the fresh orange peel works just as nicely to balance the robust taste of the beef. This is an easy dish to make and is a pleasant change of flavour from the usual stir fried beef recipes.
