225g rice noodles rice vermicelli or rice sticks
225g fresh bean sprouts
110g red or green pepper (about 1)
225g waterchestnuts tinned (drained weight) or fresh
2 tablespoons groundnut oil
6 spring onions shredded
1 teaspoon salt
2 tablespoons light soy sauce
2 tablespoons dry sherry or rice wine
21/2 tablespoons tomato paste
5 tablespoons chicken stock or water
Soak the rice noodles in a bowl of warm water for 25 minutes.
Then drain them in a colander or sieve.
If you are using dried egg noodles cook them for 35 minutes in boiling water drain and immerse in cold water until you are ready to use them.
If you prefer (and have the time) trim the bean sprouts at both ends.
Finely shred the pepper.
If you are using fresh waterchestnuts peel them then slice and finely shred them.
If you are using tinned waterchestnuts drain them and rinse them well in cold water before shredding them finely.
Heat a wok or large pot over a high heat.
Add the oil and when it is almost smoking add the spring onions.
After a few seconds add the bean sprouts shredded pepper and shredded waterchestnuts and Stir fry for about 1 minute.
Then put in the rest of the ingredients and the drained noodles.
Stir fry the mixture for about 3 minutes until it is well mixed and heated through.

Rice noodles can be found in Chinese grocers but if you cant get them this recipe can be made with egg noodles. As with most noodles this dish is best served with snacks such as Steamed Spare ribs with Black Beans or Sesame Prawn Toast.
