1.34kg strawberries washed and hulled
grated rind and juice of
2 lemons
1.34kg preserving sugar
Method
1 Add strawberries lemon rind and juice together in a large pan heat
gently for 1015 minutes to extract fruit juice
2 Bring to the boil then simmer until the fruit is soft
3 Add sugar and heat gently until dissolved
4 Bring to the boil and boil rapidly until the setting point (see page 59) is reached. Avoid any spillage
5 Cool slightly
6 Pour into prepared jars cover seal and label
Makes: 2.2kg approx
