sweet saffron rice

8 tablespoons ghee

6 cloves

4cm stick cinnamon

300g basmati rice washed and drained

600ml hot water

1 teaspoan saffron strands

2 teaspoons warm milk

300g caster sugar

1/2 teaspoon cardamom powder

1/2 teaspoon nutmeg powder

2 teaspoons raisins

2 tablespoons flaked almonds

Heat half the ghee in a heavy bottomed pan and fry the cloves and cinnamon.

Add the rice and fry until it is shiny.

Pour in the hot water and bring to the boil.

Reduce the heat partially cover and simmer until fluffy and dry.

Mix the saffron into the milk and gently fold into the rice.

Add all the other ingredients and mix.

Cook on a low heat until all the ingredients are well blended.

Serve warm drizzled with a little ghee.

This recipe from Maharashtra is full of subtle nuances and tastes.
