lime and bay chicken
6 boneless chicken breasts skin on
zest and juice of 2 large limes
2 garlic cloves peeled and crushed
4 large fresh bay leaves
2 thsp olive oil
Place the chicken in a shallow baking dish.
Mix together the lime zest and juice garlic bay oil and plenty of salt and pepper.
Pour onto the chicken spooning all over.
Cover and leave somewhere cool for 12 hours.
Place the dish in a preheated oven (190C/375F/Gas Mark 5) for about 20 minutes or until cooked through basting regularly.
Test by piercing the thickest part with the tip of a sharp knife the juices should run clear.
Serve the chicken warm with plenty of the juices poured over.
